Growing up on the farm, I learned that for every job there was a knife, and a good, solid knife was always an essential tool.

I've been a butcher since the 90’s, knives play a vital role in my working life! and in learning to sharpen the knives and the inflence from Rory Connor a local blade knife maker I began my adventures in the craft and became obsessed, its the counterbalance to my love of the food world!
